Introduction

Known as one of the oldest cheeses in the world, Parmigiano Reggiano has an incredibly rich heritage. Still produced today as it was nearly 1,000 years ago, the recipe remains unchanged, using the same ingredients, craftsmanship and production techniques that have only undergone small tweaks over centuries. Parmigiano Reggiano is a Protected Designation of Origin (PDO) product. Made with only three ingredients - milk, salt and rennet – Parmigiano Reggiano contains no additives or preservatives and uses only natural bacteria. To create its distinctive taste, the cattle have a specific diet and Parmesan has a minimum maturation period of one year. From here, Parmigiano Reggiano can mature for up to 60 months with each level of maturation changing the taste, texture and profile of the cheese.

Parmigiano Reggiano is the only cheese that can be legally called “Parmesan”, is a Protected Designation of Origin (PDO) product and one of the oldest cheeses in the world. It is made in a small area of Northern Italy including the provinces of Parma, Reggio Emilia, Modena, and parts of Mantua and Bologna, Mantua to the right of the Po River, and Bologna to the left of the Reno River.
